Italian Cake
YIELD: 1 Cake
INGREDIENTS:
* 1 1/2 cups of oil (NO crappy store brand - use good quality)
* 2 cups sugar
* 3 eggs
* 2 teaspoons vanilla
* 3 cups flour
* 1 teaspoon baking soda
* 1 teaspoon salt
* 1/2 teaspoons cinnamon
* 1/2 teaspoon nutmeg
* 1/8 teaspoon anise (or several pinches worth)
* 2 cups finely chopped pared apple (any kind - the "tarter" the better in my opinion)
* 1 1/2 cup nuts
* 1/2 cup raisins (see options)
Procedure:
* Combine the first four ingredients
* Fold in the apples, nuts, and raisins
* Turn into a greased and floured tube pan (or bundt)
* Bake for 1 hr and 15 minutes (or until your toothpick comes out clean)
* Cool 10 minutes and remove from pan
